Nutrition and Metabolomics: Personalized Diet and Health

Nutrition and Metabolomics: Personalized Diet and Health

In this University of Kentucky video, J. Bruce German, professor of Food Science and Technology at UC Davis, discusses our wide and varied responses to food. What is the mechanistic basis of the diversity of human responses to food? How much of a role does diet play in the diversity of human metabolism and its deregulation? How has human milk evolved to become a nourishing and protective food? Learn about the relationship between food and human beings, and just how important it is.

The research on metabolites is exciting – but what makes me wary is this overbearing influence of businesses like nestle. These companies will only ever use these technologies for profit. Nestle has a terrible track record when it comes to human health: the powdered milk saga, the industrialised junk food they pedal, their efforts to privatise fresh water which has lead to whole towns loosing their water supply! Same goes for drug companies who won’t take kindly to technologies which allow people to individualise their diets so they don’t require as many drugs. Our economy is too immature for this new tech because putting profit before people is necessary in order for businesses to survive.

To analyze diet and health, nutrition and metabolomics should be the best way to study this field. The idea that biological fluids reflect the health of an individual has existed for a long time. Ancient Chinese doctors used ants for the evaluation of urine of patients to detect whether the urine contained high levels of glucose, and hence detect diabetes.
